Recipe: White Chili
Summary: Turkey with cannellini beans, white corn, onion, celery, and chili peppers. Flavored with chicken broth, cumin, hot pepper sauce, and topped with Monterrey Jack cheese and parsley.
Ingredients
- 1-1/2 Tablespoons Butter
- 1 Cup Onion, chopped
- 2 Stalks Celery, thinly sliced
- 4 Cups Cooked Turkey Meat, chopped
- 2 Cans Cannellini Beans, drained and rinsed, (15 ounce)
- 2 Cans Chicken Broth, (14.5 ounce)
- 1 Can White Corn, drained, (11 ounce)
- 2 Cans Green Chile Peppers, chopped, (4 ounce)
- 4 Teaspoons Ground Cumin
- 1/2 Teaspoon Hot Pepper Sauce, or to taste
- 1 Cup Monterey Jack Cheese, shredded
- 2 Tablespoons Fresh Parsley, chopped
Instructions
- In a large saucepan over medium heat the melt butter.
- Add the onion and celery and cook until the onion is translucent.
- Put the turkey, beans, chicken broth, corn and green chilies into the pot.
- Season the mixture with cumin and hot pepper sauce.
- Cover and cook for 15 to 20 minutes.
- Ladle chili into your bowls and garnish with the shredded cheese and chopped parsley.
