Recipe: White Chili

Ingredients

  • 1-1/2 Tablespoons Butter
  • 1 Cup Onion, chopped
  • 2 Stalks Celery, thinly sliced
  • 4 Cups Cooked Turkey Meat, chopped
  • 2 Cans Cannellini Beans, drained and rinsed, (15 ounce)
  • 2 Cans Chicken Broth, (14.5 ounce)
  • 1 Can White Corn, drained, (11 ounce)
  • 2 Cans Green Chile Peppers, chopped, (4 ounce)
  • 4 Teaspoons Ground Cumin
  • 1/2 Teaspoon Hot Pepper Sauce, or to taste
  • 1 Cup Monterey Jack Cheese, shredded
  • 2 Tablespoons Fresh Parsley, chopped

Instructions

  1. In a large saucepan over medium heat the melt butter.
  2. Add the onion and celery and cook until the onion is translucent.
  3. Put the turkey, beans, chicken broth, corn and green chilies into the pot.
  4. Season the mixture with cumin and hot pepper sauce.
  5. Cover and cook for 15 to 20 minutes.
  6. Ladle chili into your bowls and garnish with the shredded cheese and chopped parsley.
