Recipe: Ground Beef Chili

Summary: Sauteed ground beef, onion, green pepper and garlic combined with kidney beans and stewed tomatoes. Seasoned with chili powder hot pepper sauce, cumin and oregano.

Ingredients

  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 Pound Ground Beef
  • 1 Onion, finely chopped
  • 1 Green Bell Pepper, finely chopped
  • 3 Cloves Garlic, finely chopped
  • 1 Can Red Kidney Beans, (15 ounces), drained and rinsed
  • 1 Can Black Beans, (15 ounces), drained and rinsed
  • 1 Can Stewed Tomatoes, (14 ounces)
  • 1/4 Cup Tomato Paste
  • 1/4 Cup Honey
  • 1 Tablespoon Chili Powder
  • 1 Teaspoon Ground Cumin
  • 1 Teaspoon Dried Oregano
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Hot Sauce
  • Garnish: Serve chili topped with shredded cheddar cheese and sliced green onions, if desired.

Instructions

  1. Heat the oil in a large pot or a Dutch oven.
  2. Add the beef, breaking up the meat while cooking.
  3. Cooking time usually takes about 5 minutes, or until browned.
  4. Add the onion, bell pepper and garlic and cook for an additional 5 minutes or until the vegetables are soft.
  5. Add the beans, tomatoes, 1 cup water, tomato paste, honey, chili powder, cumin, oregano, salt and hot sauce.
  6. Simmer covered 2 hours.
  7. Top with garnish of choice.
