Recipe: Green Turkey Chili
Summary: Turkey, onion, kidney beans and corn in a green chili and green tomatillo salsa based broth.
Ingredients
- 2 Turkey Thighs, (1 pound each), skin removed
- 1 Medium Onion, chopped
- 1 Can White Kidney Beans, (15.5 ounces), rinsed
- 1 Can Corn, (11 ounces), drained
- 1-1/2 Cups Green Tomatilla Salsa, medium heat
- 1 Can Green Chiles, (4.5 ounces), chopped
- 2 Teaspoons Garlic, minced
- 1-1/2 Teaspoons Ground Cumin
- 1/2 Teaspoon Salt
- 1/3 Cup Cilantro, chopped
Instructions
- In the slow cooker, place the turkey thighs and arrange the onion around the things.
- Add the beans and corn.
- In a medium bowl, mix the salsa, chilies, garlic, cumin and salt.
- Pour the mixture over the top of the turkey thighs.
- Cover and cook on low 8 to 10 hours or until the meat is tender.
- Remove the turkey to a cutting board.
- Cut the thighs into bite size pieces discarding the bones and skin.
- Return the meat to the slow cooker.
- Stir in the cilantro.
- Serve with garnish of choice.
