Recipe: Chili Verde

Ingredients

  • 1 Large Can Green Chilies
  • 2 Pounds Boneless Pork
  • 2 Teaspoons Bacon Drippings
  • 1 Onion, chopped
  • 2 Cloves Garlic, minced
  • 3 Tablespoons Flour
  • 1 Bottle Green Taco Sauce, (10 ounces)
  • 2 Cups Beef Stock
  • 1/2 Teaspoon Oregano
  • Cilantro for Garnish

Instructions

  1. Cut the pork into bite size pieces with the fat trimmed.
  2. Cook the bacon and set aside.
  3. Add the pork to the bacon drippings and brown.
  4. Add the onion and garlic and cook until tender.
  5. Stir in the flour and cook until it is bubbly.
  6. Add the chilies, sauce, beef stock and oregano.
  7. Add salt and pepper to taste.
  8. Cover and simmer until the pork is tender which usually takes approximately 1 1/2 hours.
  9. Serve with flour tortillas.
