Recipe: Blond Chicken Chili

Summary: Chicken breast, onion, green chili peppers, and great northern beans highlight this chili. Flavored and seasoned with chicken broth, garlic powder, ground cumin, oregano, cilantro and crushed red pepper.

Ingredients

  • 1 Tablespoon Vegetable Oil
  • 3 Pounds Skinless, Boneless Chicken Breasts, cubed
  • 1 Cup Onion, chopped
  • 2 Cups Chicken Broth
  • 2 Cans Green Chile Peppers, (4 ounce), chopped
  • 5 Cans Great Northern Beans, undrained, (14.5 ounce)
  • 1 Tablespoon Garlic Powder
  • 1 Tablespoon Ground Cumin
  • 1 Tablespoon Dried Oregano
  • 2 Teaspoons Fresh Cilantro, chopped
  • 1 Teaspoon Crushed Red Pepper

Instructions

  1. Over medium high heat in a large skillet, place the vegetable oil and chicken.
  2. Stirring occasionally cook the chicken until all pieces are evenly brown.
  3. Stir in the onions.
  4. Cook the onions until they are translucent.
  5. Drain the mixture and set aside.
  6. In a large saucepan over medium heat, bring the chicken broth and green chile peppers to a boil.
  7. Stir in 3 cans of great northern beans, garlic powder, cumin, oregano, cilantro and crushed red pepper.
  8. Stir in the chicken and onion mixture and reduce the heat.
  9. Simmer for 30 minutes or longer, adding additional beans from the remaining cans for a thicker consistency as desired.
