Recipe: Award Winning Chili
Summary: This is a fantastic recipe for award winning chili. It’s tender, juicy and packed full of wonderful flavors. I like to serve mine with a dollop of sour cream, some shredded cheddar cheese and some tortilla chips.
Ingredients
- 1 (14.5 ounces) can Stewed Tomatoes, chopped
- 1 (6 ounces) can Tomato Paste
- 1 Carrot, sliced
- 1 Onion, chopped
- 2 stalks Celery, chopped
- 1/4 cup White Wine
- 1 pinch crushed Red Pepper Flakes
- 1/4 cup chopped Green Bell Pepper
- 1/4 cup chopped Red Bell Pepper
- 1/3 cup Steak Sauce
- 5 slices Bacon
- 1-1/2 pounds Ground Beef
- 1 (1.25 ounces) package Chili Seasoning Mix
- 1 teaspoon Ground Cumin
- 1 (15 ounces) can Kidney Beans, drained
- 1 tablespoon chopped Fresh Cilantro
- 1 tablespoon chopped Fresh Parsley
Instructions
- Combine the tomatoes, tomato paste, carrot, onion, celery, wine, pepper flakes, bell peppers and steak sauce in a large pot over medium-low heat.
- In a large skillet over medium heat, cook the bacon until crisp.
- Remove the bacon to drain onto paper towels.
- Cook the beef in the bacon drippings until brown.
- Drain.
- Stir the chili seasoning into the ground beef.
- Stir the seasoned beef, cumin and bacon into the tomato mixture.
- Continue to simmer until the vegetables are crisp tender and the flavors are well blended.
- Stir in the beans, cilantro and parsley.
- Heat through and serve.
